Recipe: Peach Smoothie with Ginger and Cinnamon

Peach  smoothie

This Peach Smoothie with Ginger and Cinnamon is high in fiber and  rich in beta carotene, Vitamin A, and lutein which both protect your vision and keep your eyes healthy.  Studies have shown that plant chemicals found in the skin of peaches and nectarines may have anti-cancer properties and may be especially valuable for healthy breasts. Both peach skin and cinnamon support normal blood sugar control.

Easy to Prepare. You will be drinking your Peach Smoothie in no time!

Ingredients

4 large organic peaches with skin, pits removed

2 cups coconut milk, unsweetened

1 tablespoon grated fresh ginger root with skin

1 teaspoon ground cinnamon bark

Mix all ingredients in a blender until smoothe

For a thicker smoothie add a 4-6  ice cubes and reduce liquid by 1/2 cup

Variations:

Add

1/2 teaspoon ground cinnamon

1/2 teaspoon ground cardamom

1/4 teaspooon ground nutmeg

1/4-1/2 cup fresh mint leaves loosely packed

1/4- 1/2 fresh basil leaves instead of mint leaves

use 3 peaches and 1/2 cup of blueberries

use nectarines instead of peaches

for a protein shake  add 2 heaping tablespoons whey powder or 3 heaping tablespoons of pea or rice protein powder
